What it
usually means.

Every oven has some hot spots, and good results rely on air moving around the pan and on the heat sources taking turns as designed. When browning becomes clearly lopsided, something has changed: an element that no longer heats along its full length, a convection fan that has stopped stirring the air, a door that leaks heat on one side, or a pan or rack position that blocks the flow. Setup is worth ruling out first, because it costs nothing and fixes a fair share of cases.

A new coiled broil element is held up inside the open cavity of a wall oven in a US home kitchen, just below the old blistered element still mounted on the ceiling. The 5 causes, cheapest first

Answer these first

01

Is it always the same side, back or front that browns too much?

02

Is the bottom burning while the top stays pale, or the reverse?

03

Does it happen in convection modes, regular bake, or both?

04

Which rack position, pan size and pan color are you using?

05

Is there foil on the oven floor or covering a rack?

Check these
before you book.

Oven baking unevenly: 5 checks, and none of them costs anything.

01

Remove any foil from the oven floor and racks and bake again with space around the pan.

02

Use the rack position the recipe or the manual recommends, and try a light-colored pan.

03

In a convection mode, look through the window or listen for the rear fan turning.

Also worth checking

  • Bake a sheet of plain white bread slices to see which areas brown first.
  • Describe the pattern, and whether it changes with convection, when you book.

How soon does it need a visit?

Not urgent. The oven can still be used while you adjust racks and pans. If the uneven heat comes with a smell, a noise from the fan or a tripped breaker, follow those pages first.

5 things oven baking unevenly turns out to be, from foil or pans blocking airflow to convection fan not stirring the air.

The cost guide
  1. 01 no repair

    Foil or pans blocking airflow

Foil on the oven floor or a rack, or pans that nearly fill the rack, trap heat below and block the air. Leave space around every pan.

  2. 02 low

Element heating only part of its length

An element that is starting to fail may heat hotter in one section, which shows as one corner of the pan browning first.

  3. 03 low

Door gasket or hinge letting heat out

A gap on one side of the door cools that side of the oven, so food near it lags behind.

  4. 04 low

    Temperature swinging too far

A sensor that is slow to react lets the heat overshoot and undershoot more than it should, so bottoms scorch during the long burns.

  5. 05 moderate

Convection fan not stirring the air

In convection modes the fan spreads heat evenly. When it stops or runs slowly, the back of the oven gets far hotter than the front.

Questions about
oven baking unevenly.

Is it normal for the back of the oven to be hotter?
A little, in most ovens. Rotating pans halfway through is common advice for that reason. A difference large enough to burn one side of a single sheet of cookies is not normal.
Why are my bottoms burnt only in the lower oven of a double oven?
The two cavities can have different elements and fans. The lower one sometimes relies more on its bottom element, so rack height and pan color matter more there.
Should I use convection to fix uneven baking?
Often it helps, since that is what the fan is for. Most manuals suggest lowering the setting slightly in convection. If convection makes it worse, the fan is the suspect.
Can dark pans cause uneven baking?
Yes. Dark and glass pans absorb more heat and brown bottoms faster than shiny metal ones. Switching pans is a free test.
