A lasting gas smell is an emergency. Leave the home, avoid anything that can spark, and call the gas utility or 911 from outside. Do not try to find the leak, turn a valve or restart the oven. The oven is looked at only after the utility has made the home safe.

Natural gas and propane have no smell of their own, so the utility adds a sulfur-like odorant precisely so that a leak announces itself. A faint whiff for a second or two while a gas oven lights can be normal, because a little gas reaches the burner before the flame catches. A smell that lingers, grows, or is there while the oven is off is different: it can mean gas escaping at a fitting, a valve that does not close fully, or a burner that is not lighting while gas still flows. I only smell gas for a moment when the oven lights. Is that a leak?
A short puff at ignition is common on gas ovens and usually fades within seconds. If it lasts, gets stronger over the months, or comes with a loud whoomp as the burner catches, have the ignition looked at, and if the smell ever stays, leave and call the utility.
Should I open the windows before I leave?
No. Getting everyone out comes first, and every minute spent inside is a minute near the gas. The utility ventilates and tests the home when they arrive.
Will the gas utility charge to come out for a smell?
Most US gas utilities respond to a reported leak as a safety call. Ask them when you call, but never let the question delay the call.
Does a carbon monoxide alarm detect a gas leak?
No. A carbon monoxide alarm reacts to a product of burning, not to unburned natural gas or propane. Your nose, and a separate combustible gas detector if you have one, are what catch a leak.
